Regional Notes: Fazenda Floresta is one of 14 farms that comprise Cooperbio surrounding Chapada Diamantina, in the Bahia state of Brazil. The “chapadas” of this area are towering rock formations, pockmarked with caves and streaked with deep chasms that sprout waterfalls during the rainy season. Sloping away from the base of the Chapadas are mineral rich alluvial fans where the coffee is grown. Chapada Diamantina is the best known of these formations, scoured by early Portuguese settlers in search of diamonds, hence the name. Though this farm has been certified organic since 2001, it has upped the ante by becoming certified biodynamic by the Demeter Association. Biodynamics is uber organic, a marriage of land stewardship, animal husbandry, social consciousness and the implementation of lunar cycles in the planting and fertilizing activities to obtain the optimal universal bond with the farm. Well-drained, acidic, mineral rich and heavily composted soil creates the ideal conditions for a superb organic coffee.
Cupping notes: A perfect balance of soft fruit, almonds and honey, with hints of chocolate liqueur.
